I have a cutter with a large z axis, but a limited cutting tool. I'd like to be able to cut a 3d path based on a single line or surface, similar to the normal 2d cutting paths.

I tried changing the shape of a path generated in 2d, but it just projected the new path down to the normal cutting plane (which is great error handling). Is this possible? The 3d contouring generates a lot more paths than I need, I just need to cut an outline that moves in 3d, but still a single cutting path. If it's not possible, no big deal, but a lot of things I didn't think I could do in SketchUCAM turned out to work great, so I thought I'd ask.

no, single line cuts are 2D only.
once you understand the Gcode it is not that hard to add Z heights to the 2D moves.
but in doing that, it is also VERY easy to crash into something and break stuff (-:
it would be better to to use Fusion360 for the more advanced 3D paths.
